Fukamushi

Sencha was first made in Japan in the mid 20th century. Fukamushi means “steamed for a longer time or deep steaming”. As the amount of time tea leaves streamed determines its taste and characteristics, Fukamushi stands apart from other Sencha teas. Fukamushi is immensely popular and processed in Shizuoka province. It is steamed for approximately 100 seconds or 60 seconds twice, which results in the breaking of tea leaves and losing their shape. It then in later processing helps to break down tea leaves and release more flavor. Therefore, leaves appears broken compared to other Sencha tea types.

This tea variety has an intense green color, and a fuller rounded flavor with distinctive fine-floating tea particles. Rich and mild. It is becoming increasingly popular in Japan due to its mild taste and extra health benefits. Exposure to the sun increases the amount of the antioxidant catechins (EGCG) and vitamins.

This week’s tea: OCHA & CO. Organic Japanese Fukamushi Sencha

Tasting notes: Deep, rich and smooth. Really nice umami with vegetal notes of mild asparigus

Opinion: Delicious - Multiple steeps held flavor characteristics without getting bitter. One of my favorite tea types and distinct offering from Ocha & Co - Highly Reccomend
